CHEESECAKE!

I love cheesecake.


In fact, I don't like regular cake at all. So we had cheesecake for our wedding cake. With all the toppings on the side. That way, you could choose what topping you wanted....or none at all.


I came across this recipe about 8 years ago. I love it. It is really simple and tastes DELICIOUS! The white chocolate chips ( and I am NOT a white chocolate fan ) totally offsets the cheesecake flavor and is the perfect accent. Give it a try, you'll love it!





White Chocolate Cheesecake

2 pkg (8 oz) cream cheese, softened
½ c sugar
½ tsp vanilla
2 eggs
2/3 c white chocolate chips
1 ready to use chocolate or graham cracker pie crust (9 in)

Mix: cream cheese, sugar and vanilla with mixer. Add eggs and mix again. Stir in 1/3 c white chocolate chips.

Pour into crust. Sprinkle with remaining white chocolate chips.

Bake at 350 for 35 mins or until center is almost set. Cool. Refrigerate for 3 hours or overnight.

I've never tried it, but I was watching a baking show called "sugar" and when she made her cheesecake, she baked it in a waterbath (in a large saucepan and filled up about 1/2 way with water) and it was supposed to help not crack the top. And something about making sure you don't over whip the batter - getting air into the cake is what makes it crack. Not that I care at all if it cracks (I'm usually just proud for making it), but the show is fresh in my mind, so I thought I would share! Looks yummy!

I made the cheesecake for my family last week and all I can say is WOW! That's is the best cheesecake I've had in a long time. My son wants me to make it again but with the chocolate graham crust. Thanks for sharing the recipe and I really enjoy your blog.
